"You won't have to start paying us back until 6 months after graduation."

Huh?

Maybe I was just really special, but I thought that was the way ALL student loans worked? Anyone out there have a student loan they had to start paying off while still enrolled?

Yeah, if you don't take a Stafford loan or something similar (such as certain banks), there are chances that you have to start paying back immediately after graduation or even before graduation. There aren't too many of those, though, because of competition with government-funded loans.
